Fleur de Sel - doesn’t only sound fancy, it is fancy. Fleur de Sel is very delicate and deliciously crispy. Just like crude sea salt Fleur de Sel is also extracted from salt evaporation ponds at the coast. The salty sea water from the Atlantic is being guided through a system of canals and ponds. Due to the influence of the sun and wind the salt concentration is slowly increasing. When the salt finally crystalizes the crude and heavy salt crystals are sinking to the ground and they are being harvested as sea salt. Only a very small part of especially fine salt flakes, stay on the water surface: The Fleur de Sel. This upper class version of sea salt is now being carefully pulled towards the shore by hand with the help of wooden rakes. Fleur de Sel is ideal as a table salt, for seasoning dishes and even for sweets such as chocolate mousse or caramel. Fleur de Sel is the perfect salt to give your dish an interesting twist. There is one danger: Once you go Fleur de Sel you’ll never go back.
